Perfect Pumpkin Cookies

Thanksgiving is right around the corner, and this recipe for Pumpkin Cookies is sure to delight your family while filling your house with the warm aroma of the holidays. The even, steady heat of a natural gas oven will help your cookies turn out perfectly every time.

2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ tsp pumpkin pie spice
1 cup butter, softened
1 cup sugar
1 15 oz can pumpkin
2 eggs
1 tsp vanilla

Preheat oven to 375 degrees. Using a small bowl, combine flour, soda, salt and spice. Set aside. Using a mixer, beat butter and sugar until creamy. Then add pumpkin, eggs and vanilla. Gradually add in the flour mixture. Drop rounded tablespoonfuls two inches apart onto a well-greased cookie sheet. Bake 18 to 20 minutes until edges are lightly browned. Let stand 5 minutes. Remove from cookie sheet and cool completely. Yields about 30 cookies.
